This Greek Quinoa bowl is just so delicious. It's one of those dishes that I could eat over and over again and never get sick of it. With all the veggies it is just so colorful and refreshing. I also like to cook a little extra and use it for lunch for the next few days and stuff it all in a whole grain pita pocket! I usually don't share a whole lot of recipes but I have had a few requests for this recipe that I posted over on Instragram!
What is so fun about a bowl is you can pretty much get away with throwing whatever you want into it. I always cooked the main part of the bowl and put it on a plate and just hand it over to whoever is eating and let them load up on whatever veggies and toppings I have put out!
There is no right or wrong way to make a bowl but here is what I have in mine here!
3/4 cup chicken
1/2 cup of Quinoa (already cooked)
1 cup Spinach or Arugula
a sprinkle a Feta cheese
To make my chicken I like to put it in the crockpot so it will just fall apart and be nice and tender!
